Just-Notes works offline, and that is the normal state of it rather than a mode you fall back to. Writing, searching, reminders, attachments, the widget and export all run on the device itself, because the notes are already there: every word is saved to your own disk as you type, within about half a second.
On a plane, and everywhere else
Nothing you do in the app waits for a network. Open it on a flight or two floors underground and it behaves the way it behaves at home.
Underneath that there is a simpler reason. Your notes are a file on your own disk, so opening them takes the machine in front of you and nothing else. A laptop that has been offline for a month opens them exactly as it closed them, and so does one that has never been signed in to anything at all.

Typing a word searches every note you have written, without asking a server anything. The index is built on the machine and lives on the machine, so search is as available as the notes are, and what you look for stays between you and your computer.
Use it without an account
The first screen asks one question, and offers two answers: sync between your devices, or free without it. Take the second and the app opens, and you can write in it for as long as you like without an account. Notes, checklists, tables, reminders, attachments, themes, widgets and export are all there.
Export, so leaving is easy
Export saves every note as a plain text file, with the files you attached in a folder beside them. Plain text opens in any editor on any system, this year and in ten years, and that is the point: the format is plain from the start, so your notes stay readable outside this app as well as inside it.
Sync, when you want it
Sync is the one part that uses the internet, and it is optional. Switch it on and your notes travel between your own devices through a private folder in your own Google Drive that only Just-Notes can open. The copies that exist are the ones on your devices and the one in your Drive, and your Google account is what protects them. Sync is the paid part of the app, at €4.99 a month or €44.99 a year.
Leave it off and everything above carries on working.
